Italian Food Culture in the Time of Raphael, a Zoom Webinar by Daniele Macuglia, Historian of science and research fellow at the University of Chicago’s Neubauer Collegium for Culture and Society & Francesco Bellissimo, Italian celebrity chef operating in Japan, businessman, author, and sommelier dell’olio

This lecture will provide an opportunity to celebrate Raphael in 2020, the 500th anniversary of his death. We’ll talk about Renaissance food, starting with a virtual tour of “Casa Raffaello” in Urbino, exploring the kitchen and common spaces. We will also discuss the historic food of today’s Marche region, focusing especially on a renowned cheese that Michelangelo was also known to enjoy, while discussing some chefs who gained fame in Italy during the time of Raphael. Finally, Chef Francesco Bellissimo will teach us about some traditional dishes, exploring recipes that you can easily try at home with your family and friends.

Daniele Macuglia is a historian of science and research fellow at the University of Chicago’s Neubauer Collegium for Culture and Society. Interested in the civilization of the Italian Renaissance, he has extensively focused on Italian food history, organizing events and cultural programs in Asia and the US.

Francesco Bellissimo is an Italian celebrity chef operating in Japan, businessman, author, and sommelier dell’olio. He serves as the president of the Associazione Culinaria “Italia Ryori Kenkyukai”. As an experienced food critic, Francesco is interested in reconstructing
forgotten dishes of the Italian history according to the original recipes as they appear in the archival sources.
